Treat Your Inner Child at the End of the Rainbow!

These cookies take playful nostalgia and turn it into a full-on childlike wonder of the tastebuds. Packed with the best part of everyone's favorite cereal, Lucky Charms cookies are as fun to look at as they are to eat - but the addition of Mush-Melo minis is a dream collab come true. They may very well be the best thing to happen to St. Patrick’s Day, but let’s be honest - if you’re not Irish, you’ve got a free pass to celebrate these all year long.

The result is a soft, chewy cookie with crispy edges, bursts of sweetness from a colorful assortment of cereal marshmallow charms, and pockets of gooey Mush-Melo throughout. It’s a bold, whimsical treat that balances innovation, creativity, and just the right amount of chaos.

What makes the perfect cookie texture?

A balance of butter, sugar, and baking time is key. Slightly underbaking ensures soft center, while proper spacing allows edges to crisp up perfectly. Baking soda will be a better friend than baking powder with this recipe in order to get that flatter browning and chewyness.

Ingredients

Cookie Dough

1 cup (2 sticks) salted butter, softened
¾ cup granulated sugar
¾ cup brown sugar
2 large eggs
1 tsp. vanilla extract
2 ½ cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt

Mix-Ins

1 ½ cups Lucky Charms cereal
20 Mush-Melo mini marshmallows

Directions

  1. To start: Preheat the oven to 350°F and line two standard baking sheets with parchment paper.
  2. For the dough: Cream butter and sugars until light and fluffy. Add eggs and vanilla, mixing until smooth.
  3. For the base: In a separate bowl, combine flour, baking soda, and salt. Now, gradually mix this into wet ingredients and massage for a clean consistency.
  4. For the magic: Fold in Mush-Melo mini marshmallows to an even composition, and then scoop out a dollop for each individual cookie. When rolling into uniform dough balls gently press in Lucky Charms marshmallows to avoid crushing.
  5. To finish: Place onto baking sheets and bake 10-12 minutes until edges glow like a pot of gold. Cool slightly, and serve.
